Suggestions for easy large group dinners?
I work at a church and for dinner on Sunday night we usually order pizza or bake huge bags of chicken nuggets. Since then our youth group has grown substantially and we now have the problem of feeding anywhere between 50-70 kids on Sunday nights. We need some suggestions for easily prepared food options that we can cook. We already have a chicken nuggets, and pizza but need more of a variety of meals. It would be best if we could buy the food in bulk and make it that way, with say 2-5 ingredients. No very labor intensive recipes please!Question #2:

why are my cupcakes too dense?
I've made a few recipes lately, and my cupcakes are a little more dense and dry than i like. everyone else says they're good, so i don't think they're *bad*, and they'd be good if i were really decorating them, but as far as cake itself goes, i like mine to be a little more fluffy and moist.am i doing something wrong? over mixing maybe?
or is it the recipe? do you have a standard light and fluffy and moist cake recipe you could recommend?
is there anything you can tell me about the science behind that, so i know how to choose recipes on my own just by looking that will be light and moist, rather than dense?
For a party soon I want to make margarita cupcakes with tequila lime frosting so i want them to be knockouts!

I do everything wrong and forget everything.. HOW TO FIX?
My dad is now forcing me to get a job.. but I can't get a job.. Whenever I have a job, I do everything wrong! And I have a terrible memory, so things I need to memorize just go right passed me.. And my concentration and listening skills are abysmal. So if someone needs to tell me something, if its more then 1 sentence long, I will forget the rest of what they are telling me no matter how hard I concentrate, and please know I am not exaggerating.. In the passed I worked as a chef and I got yelled at a lot for screwing up so much, I could never remember any recipes and always needed to ask help for everything. I constantly asked the same questions over and over every day.I also get very stressed and get the runs before work and on the way to work, I have lost 10lbs on my previous job from this. Also I tend to be quite shy and unable to speak with people. They did not allow me dealing with customers at my last job because of this. And they eventually stopped calling me in for shifts.
What is a good job for me? Where can I work?

Is this a good recipe for losing weight?
I love soup, so I've been experimenting with new ideas and I just came up with this one:Saute garlic and onions in a bit of extra virgin olive oil
Add asparagus and spinach and cook until soft
Add diced tomatoes and 2 cups low sodium chicken broth, 1 tsp low sodium soy sauce
Add half a cucumber
Then I pour the whole thing into my smoothie maker and puree it until it's smooth. It makes about 4 cups of soup and I drink all of it for dinner. Is this an OK soup for weight loss?
Oh, and I also have a low-fat protein with it (like salmon, shrimp, or quorn chicken).
