My favorite way is fairly simpleStab holes at various depths ALL OVER the loin. Fill the holes alternating with pistacio nuts and slivers of garlic.
For a 4 lb roast, 4 cloves of garlic cut into about 50 slivers, and about 50 pistacio nuts will do. And, stab then stuff (rather than doing all your stabbing first because you wont be able to find the holes)
Salt and pepper the roast and roast at 400f until the roast internal temp reaches 160. (about 1 hour - 1:15)
Slice thinly and you get a very pretty looking slice studded with holes of pistacio and garlic

Season the pork loin with rosemary salt&pepper place in a casserole dish or a deep baking pan ..add 1 cup of stock or water...bake at 350 for 25 mins per pound (1 1/2 -2 hours)for an all inclusive meal..add carrots and potatoes during the last hour of cooking
