I dipped mine in egg and milk then dip it in italian bread crumbs, put some oil in a pan and fry until brown on both sides.

brush w/ EVOO, sprinkle w/ combo of kosher salt, coarse ground black pepper, a bit of onion and garlic powders, some dry thyme, and (dry mustard powder, dry ginger powder if you have them) maybe a little paprika.

400ºF for about 30-40 min, depending upon thickness

BAKED PORK CHOPS WITH HERB STUFFING

Bake chops with dressing in this simplified variation of stuffed pork chops. 6 rib or loin pork chops (about 3/4" thick) 1 c. each chopped celery & onion 3 tbsp. chopped parsley 3/4 tsp. salt 1/2 tsp. each pepper & sage & thyme leaves 4 c. fresh bread crumbs (7-8 slices whirled in a blender) 2 eggs, beaten
In a wide frying pan, melt the butter over medium-high heat. Add chops and cook just until browned, about 2 minutes per side. Remove from pan and set aside. Add celery and onion; cook until limp. Remove from heat. Stir in parsley, salt, pepper, sage, thyme, bread crumbs and eggs.

Place a pork chops at the end of a greased 7 x 11 inch baking pan. Spoon about 1/6 of the stuffing mixture over the chop, place another chop on top, overlapping it slightly. Continue alternating stuffing with chops. Bake uncovered in a 350 degree oven just until chops are no longer pink inside, about 30 minutes. Makes 6 servings.
